We found Klaus the way so many good things happen these days - through Instagram.

He appeared in our feed, and something made us stop. Maybe it was the photographs. Maybe it was the simplicity of what he was doing. Maybe it was just one of those moments where you look at someone's work and think: this person knows exactly what they're doing.

So we reached out. And from the very first conversation, we knew this was different.

A clarity that's rare

There's a kind of person who talks about their work the way Klaus does - with calm, with precision, with no performance involved. He knows what he's building. He knows why he's building it. And he's not in a hurry to cut corners to get there faster.

That kind of clarity is rare. And honestly, quite magnetic.

He told us about his process without us having to ask. About the sourcing, the seasonality, the suppliers he trusts and the ones he's walked away from. Where it started

Like most of the best food stories, Klaus's started in a kitchen.

His mother's kitchen, to be specific. He spent years there - watching, absorbing, learning without even realising he was learning. As he grew older, that quiet curiosity turned into something deeper: a serious exploration of flavour, of what makes ingredients extraordinary, of the gap between food that's produced and food that's made.

Over time, one truth became impossible to ignore: great food comes down to two things. The best ingredients you can find. And a generous amount of love.

Madeira as an ingredient

It would be difficult to overstate how much the island shapes what Klaus makes.

Madeira is not a typical place. The climate, the volcanic soil, the altitude, the humidity - all of it produces fruit with a density of flavour that you notice immediately. Klaus sources locally and seasonally, which means what you're eating isn't just freeze-dried fruit. It's freeze-dried Madeira, at the exact moment of the year when that fruit is at its best.

In 2023, Klaus opened IslandPearls and made real what had been a lifelong dream. The name says it all - small, precious things from an island, preserved at the peak of their beauty.

What you'll find in his collection

Klaus currently offers four products, each one a study in restraint and quality.

Freeze-dried Mango - Madeira's tropical climate produces mangoes with an intensity you won't find elsewhere. Freeze-dried to preserve every note of that flavour, with nothing added.

Artisan Energy Bites - The one product where Klaus blends, rather than preserves. A combination of island ingredients crafted into something for the long days and the moments that need a little more fuel.

Why we chose him first

When we decided to open The Local Story as a platform for artisans, we spent a long time thinking about who should go first. Not because the decision was difficult - it wasn't, really - but because we wanted to understand what it was about Klaus that felt so right.
